Pea shoot avocado salad



A lot of people don’t know what to do with pea shoots or sprouts. Here is a great and flavorful way to incorporate them and their many health benefits into your day Ingredients:

  • 4 chicken breasts, very thin

  • 1 large green pepper, thinly sliced 

  • olive oil spray

  • 6 ounces pea shoots or green sprouts

  • 3 avocados sliced

  • 1 grapefruit, peeled and thinly sliced 

  • 1/4 cup rice wine vinegar

  • 1/8 cup extra virgin olive oil

  • 1 teaspoon honey

  • 1 teaspoon oregano

  • 1/2 teaspoon salt pink Himalayan

Directions:

Prepare a large grill pan on high heat. Spray it well and get it hot. Add the chicken and green peppers. After 2 minutes turn over the chicken and let cook for 2 more minutes. Remove from the fire and let peppers grill for 4 more minutes. Slice the chicken very thinly and add it to the salad right before serve. 

In a salad bowl add the oil, vinegar, spices, and honey and whisk with a fork.

Add the rest of the ingredients and mix well. Serve right away
